Ingredients

For Batter
1 cup Gram flour
4 tsp Sugar
1 tsp Salt
2 tbsp Oil
1 cup Water
1 tsp Eno fruit salt
For Tempering
1 tbsp Oil
0.5 tsp Mustard seeds
7 Curry leaves
1 Chilly Cut in rounds
For Garnish
Coriander leaves
Grated Coconut

For Batter

In a bowl mix well all the ingredients of batter except eno and keep aside for half an hour.

Heat the water in steamer and apply oil on the vessel in which khaman is to be cooked.

Add eno in the batter and mix well and immediately pour it in cooking vessel and keep it in a steamer.

Cook on high flame for 15 minutes. Once cooked take it out from steamer and let it cool for a while.

For Tempering

In a small pan heat oil, add curry leaves, mustard seeds n chillies. Let them crackle.

Now slow down the gas and add water, sugar and salt. Let it cook till sugar dissolves.

Pour the tempering on khaman Dhokla and cut into square pieces.

Garnish with grated coconut and corriander leaves and serve with green coriander chutney.
