Ingredients

3 cup Basmati Rice
750 grams Mutton
4 medium Chopped Onion
3 medium Chopped Tomatoes
1 tbsp Garlic paste
1 tbsp Ginger paste
1 tsp Turmeric
250 grams Spicy tooth Biryani paste
0.25 cup Oil
0.25 Ghee
2 tbsp Milk
Saffron
1 tbsp Rose water

Mangalore Biryani is a delicious savory rice dish that’s loaded with spicy marinated muttin /Chicken caramelized onions, and flavorful saffron rice. For my Biryani, I’ve simplified the order of operations, while retaining the traditional layered approach to assembling it.

For Mutton Gravy

In a cooker add oil and ghee let them heat and then add onion and fry it till its golden brown. Now add tomotoes and ginger garlic paste, cook it for 2 mins. Add the mutton pieces, salt, turmeric powder and spicy tooth biryani paste. Close the cooker led and cook till 4 whistles or mutton is tender.

For Rice

Boil the rice. (Don't cook it completely)

In a bowl mix milk, rose water, color and saffron and keep aside.

For Layering
In the bottom of a vessel add some boiled rice. On top of the rice spread the biryani gravy and on it spread the remaining rice. Now sprinkle the milk mixture. Garnish with cashew nuts, raisins, coriander leaves, mint leave & fried onion. Put 1 tbsp of ghee on it. Cover and cook on high flame for 5 minutes and then on low flame till rice are perfectly cooked.
